While exploring the flavorful maze of Nankinmachi, I couldn’t help but notice another local favorite that kept popping up at various food stalls: the Kobe croquette. Drawn in by the delicious aroma and the steady line of people gathered in front of one particular stand, I decided to give it a try—and I’m so glad I did.
Kobe croquettes, or korokke (コロッケ) in Japanese, are a beloved street food across Japan, but Kobe puts its own special twist on this classic comfort snack. Traditionally, a croquette consists of mashed potatoes mixed with ground meat or vegetables, formed into a patty, coated in panko breadcrumbs, and deep-fried until golden brown.
